cabbage and cookies



after working slightly late, i came home wanting something fast and simple for dinner.  i wish this cabbage idea was mine but i read about it on orangette awhile back.  here cabbage is quickly sauted with some garlic chile sauce and finished off with a swirl of soy sauce.  it is so simple and quick and very satisfying with some hearty bread and maybe a fried egg on top.

spicy cabbage sautee

adapted from orangette

1 small onion sliced thinly

about 1/2 small cabbage sliced thinly

2-3 cloves garlic sliced (don’t mince or it will burn)

optional: 1 smallish bulb of fennel or i used a pepper also sliced thinly

about 1 tbsp of canola oil or some other neutral oil

2 tbsp red chile garlic sauce (this kind) or less if you dont like a lot of heat

soy sauce or tamari to taste

salt and pepper

heat a large shallow pan or wok  over high heat and add the oil.  sautee the onions until lightly brown.  add the garlic and saute for several seconds and dump in the cabbage and any additional vegetables.  toss everything to coat in the oil and let everything sit in the pan to take on some color.  you want the cabbage to really caramelize.  add the chile sauce and soy sauce and toss.  salt and pepper to taste.  sometimes i add a tiny bit of sesame oil at the end and maybe top it with some crushed toasted almonds for some crunch.  nom.




after dinner i was in the mood to bake something sweet.  i have a lot of oatmeal in my pantry and thought that oatmeal cookies would be a good way to use some of it up.  most oatmeal cookies that i have had are thick and chewy, but these develop s thin crackly crust that is a good contrast to the chewy interior.  i used some chopped dark chocolate instead of the usual raisins,  but you can add nuts, white chocolate, or semi-sweet chocolate. a tiny bit of flaked sea salt sets off all of the flavors.

salted oatmeal cookies

1 cup all purpose unbleached flour

3/4 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

14 tbsp butter softened

1 cup sugar

1/4 cup brown sugar, packed

1 large egg

1 tsp good vanilla extract

2 1/2 cups rolled oats

additions:  chopped dark chocolate, white chocolate, dried fruits, nuts, etc.

flaked sea salt (i like this one)

preheat oven to 350 F.  butter or parchment or silpat a large baking sheet.  whisk together the flour,  baking soda, baking powder, salt.  in a separate bowl, cream the butter and the sugars until light and fluffy.  scraped down and beat in the egg and vanilla.  added the flour mixture and beat until smooth.  add in the oatmeal and the additions of your choice until combined.  scoop out balls of dough and place several inches apart on the baking sheet.  i got maybe 20-24 cookies?  flatten the top of each cookie and sprinkle on several flakes of sea salt.  bake for 13-18 minutes or until golden brown, rotating the pan about half way through.  move to a rack and cool.
